Today in the kitchen

Breakfast was Nutty Nuggets (Kroger's version of Grape Nuts) with dried cherries and fresh blackberries and soy milk with L.O.T.S. of coffee on the side. Funny that the other night at the Engine 2 Challenge they said coffee was a no-no. Really? I girl's gotta have a life! That is my one and only guilty pleasure.

Lunch was a green smoothie, my own concoction: spinach, frozen unsweetened strawberries, orange and some frozen mango that I had on hand. The color was gross, but the flavor was awesome. Did you know that combining citrus (Vitamin C) with iron aka: spinach increases iron absorption? No wonder I feel strong as Popeye :)

An afternoon snack was a yummy fresh pear and a couple of pretzels.

Dinner was so easy, pretty and full of flavor. I sauteed green bell pepper, yellow bell pepper, red bell pepper, fresh garlic (lots) and zucchini in a tiny bit of olive oil. I seasoned with fresh basil, oregano and freshly ground black pepper and served over whole wheat spaghetti. MMMmmm :)

Got my resistance bands workout in this morning as well.

For the record

January 9, 2012 marked a full 4 months on my vegan journey. Just for the record, as of my weigh-in yesterday (1/10/12) I have lost 33.5 pounds. I added resistance band training to my routines last week and plan for three days each week, 30 minutes each day, to strengthen my muscles and bones. I missed yesterday but will be back at it on Thursday. I also promised Muffy (my dog) that I would walk her more often...every day? My schedule is filling up, so we will see how long it takes to work into that habit.

Today, in the kitchen I made the Texas Caviar and Tortilla Pie posted on my recipe page. I also washed a BUNCH of lettuces...romaine, red leaf, green leaf, and spinach. I tore up a large bowl to have ready for salads and put the rest in a plastic bag ready to tear up when the bowl needs replenishing. I have found that if I have to wash lettuce I'm much less likely to prepare a salad...I know -- lazy! Anyway, now we can each create our own salads just like a salad bar by adding the ingredients we love. I will add Cutie orange slices and colorful peppers with a citrus dressing, Mercedes loves blue cheese dressing (not vegan) and just lettuce and Mikayla will do her own creations as well depending upon mood.

Meal time at our house seems to have become "every man, woman and child for themselves. My husband works at home and is often on conference calls when we are eating. With a start up business, he is pretty much working 24/7. The girls and I schedule meals around our outside classes and activities. For that reason, I really need to have a variety of good, healthy choices ready for everyone when they are hungry.
