New Recipes

I'm posting new recipes this afternoon...I have tried a few new things that were pretty yummy.

So, let me ask you this, if you are interested in the recipes, does scrolling through one page work well for you? I don't know how to add to that page by separate posts so that you could just click on a title and go directly to a specific recipe. I could make each recipe a separate post and just label it "recipes" would that work better?

Can you tell that I'm not adept at the technical side of blogging? I can learn :)

Swiss Chard, Garlic, Lemon and Brown Rice

I posted one of the new recipes that I tried last night. Instead of plain brown rice I used a Trader Joe's brown rice blend (includes black barley and radish seed with the brown rice) which gave a nice texture variation. I liked the recipe, but...

What I did with leftovers was a real treat. For lunch today I started with a bed of mixed greens (romaine, red and green leaf lettuces and spinach) then I drizzled an orange citrus dressing over that, sectioned a small Cutie orange and topped with the leftovers from last night (cold, although you could reheat) it was really yummy! The citrus would be very refreshing on a hot summer day.

This week in the kitchen

I'm trying some new recipes this week. Once I have an idea of how I may change them and whether or not we like them I will post. For now, the menu for the week includes two new dishes tonight and tomorrow and my favorite, vegan chili in the crockpot for Wednesday. From there on, it is anyone's guess.

Would love to hear feedback and comments regarding my recipes that you have tried. Also, feel free to comment on what you are doing for healthy eating or any recipes you come across that you think I may like.

Today in the kitchen

Breakfast was Nutty Nuggets (Kroger's version of Grape Nuts) with dried cherries and fresh blackberries and soy milk with L.O.T.S. of coffee on the side. Funny that the other night at the Engine 2 Challenge they said coffee was a no-no. Really? I girl's gotta have a life! That is my one and only guilty pleasure.

Lunch was a green smoothie, my own concoction: spinach, frozen unsweetened strawberries, orange and some frozen mango that I had on hand. The color was gross, but the flavor was awesome. Did you know that combining citrus (Vitamin C) with iron aka: spinach increases iron absorption? No wonder I feel strong as Popeye :)

An afternoon snack was a yummy fresh pear and a couple of pretzels.

Dinner was so easy, pretty and full of flavor. I sauteed green bell pepper, yellow bell pepper, red bell pepper, fresh garlic (lots) and zucchini in a tiny bit of olive oil. I seasoned with fresh basil, oregano and freshly ground black pepper and served over whole wheat spaghetti. MMMmmm :)

Got my resistance bands workout in this morning as well.

For the record

January 9, 2012 marked a full 4 months on my vegan journey. Just for the record, as of my weigh-in yesterday (1/10/12) I have lost 33.5 pounds. I added resistance band training to my routines last week and plan for three days each week, 30 minutes each day, to strengthen my muscles and bones. I missed yesterday but will be back at it on Thursday. I also promised Muffy (my dog) that I would walk her more often...every day? My schedule is filling up, so we will see how long it takes to work into that habit.

Today, in the kitchen I made the Texas Caviar and Tortilla Pie posted on my recipe page. I also washed a BUNCH of lettuces...romaine, red leaf, green leaf, and spinach. I tore up a large bowl to have ready for salads and put the rest in a plastic bag ready to tear up when the bowl needs replenishing. I have found that if I have to wash lettuce I'm much less likely to prepare a salad...I know -- lazy! Anyway, now we can each create our own salads just like a salad bar by adding the ingredients we love. I will add Cutie orange slices and colorful peppers with a citrus dressing, Mercedes loves blue cheese dressing (not vegan) and just lettuce and Mikayla will do her own creations as well depending upon mood.

Meal time at our house seems to have become "every man, woman and child for themselves. My husband works at home and is often on conference calls when we are eating. With a start up business, he is pretty much working 24/7. The girls and I schedule meals around our outside classes and activities. For that reason, I really need to have a variety of good, healthy choices ready for everyone when they are hungry.

Shopping Day

Friday's are always busy for us so we pretty much had a leftover day yesterday. Today was shopping day. Lunch was leftovers, but dinner was so very yummy.

I lightly steamed broccoli (tossing the stems into the freezer to use for broth later--see my note on recipe page) I drained the water and did a stir fry in olive oil adding fresh garlic, onions, roma tomatoes and mushrooms. Just before serving I added chopped, fresh basil (LOVE that stuff) some oregano, salt and fresh ground pepper. I poured this over whole wheat spaghetti. A wonderful, tasty, fresh pasta dish in very little time.

Thinking ahead to breakfast, I made Chocolate-Zucchini Muffins for breakfast. Ok, I will admit they made a pretty good dessert tonight as well.

While shopping today, I picked up some beautiful raspberries so I can't wait for breakfast.

Today's Menu

I made a trip to Sunflower Market yesterday. I just LOVE their double ad Wednesdays. My refrigerator is full of fresh fruits and veggies...including blackberries at 6 ounce boxes for 88 cents each :)  Can't wait to start adding those to my smoothies, but for today they were a wonderful cereal topper for breakfast.

Lunch was It's Easy Being Green Smoothies and tortilla chips with pineapple salsa! The Smoothie recipe comes from my Vitamix Whole Foods Recipes book (as does the pineapple salsa) and contains grapes, orange, pineapple, banana, carrot, spinach and apple. For dessert I made Strawberry Lime Sorbet, also from my Whole Foods Recipes book.

Dinner will be roasted veggie pizza on multigrain crust (see my recipe page) and a nice big greens salad. Mercedes has requested cheese pizza which will be on the multigrain crust. After breakfast this morning, as the girls cleaned the kitchen, I put the pizza crust together and it is rising in the refrigerator and the veggies are marinading on the counter. Tonight's pizza will have roma tomatoes, onion, mushrooms and green and yellow bell pepper.

My mind is already racing ahead to tomorrow. I'm thinking Frosty Basil Lemonade and a pasta with roasted veggies/tomatoes. We'll see how inspired I am in the morning.
